I was visiting my mother in Denver and she made this wonderful baked oatmeal for us. It really is like eating a Morning Glory muffin in an oatmeal version. It is easy because you can make it ahead and then reheat it.

Kale Salad with shredded Brussel Sprouts, Apples and Marcona Almonds

I made this yummy salad for a picnic and everybody went crazy for it. I recommend slicing the Brussels Sprouts thinly and then chopping them just a little because they are a little tough on the tooth if you get too big a piece. You can use Marcona almonds or toasted hazelnuts also work well in this recipe.

Jamaican Rice and Peas

My son has been asking for simple tasty recipes that are nutritious that even a college student could make. So we experimented with this Jamaican rice and beans recipe. I substituted black beans for the original kidney beans but that is simply personal preference. This rice was yummy and good served with a Jamaican curry or grilled fish or chicken. You can make it with white or brown rice just add more liquid if using brown.

Tomato Vodka Sauce

My son is now a college boy and is about to move into his first apartment. He has asked me to teach him some good simple recipes for college life. HIs first request was a pasta sauce. He loves a good creamy Tomato Vodka Sauce, so we created the following recipe. It was delicious and very easy to make. They say the vodka helps bring out the flavors of the tomatoes. I think it was originally created in the ’70’s by the vodka industry for some self promotion. No matter what the reason, the end result is delicious.

Raw Nutty Granola

I made this raw granola as a topping for a raw fruit bowl. Everyone loved it so much that I promised I would post it on my website. This is made entirely from nuts, no grains. It is easy because you do not need a few days to sprout anything. Simply soak the nuts and dates and raisins overnight and you are set to put it in the dehydrator. The whole process takes about a day and a half. Of course you can add any dried fruits to the granola after the dehydrating process if you want a more deluxe version.

Raw Tuna Salad Sandwich

I call this a “Tuna” sandwich but it is actually made with soaked almonds and sunflower seeds. I make a spread basically and season it as I would tuna fish. So you can use whatever seasoning is your favorite for tuna fish. I know individuals have very specific recipes for tuna salad. This is great spread on flax seed crackers, placed in the center of an avocado, served on a toasted Ezekiel english muffin, or eaten with celery sticks.

Raw Taco Meat

I have recently been adding a lot more raw food to my diet. Since I travel a lot, I am always looking for something I can take on the road to boost my nutritional intake. I came up with this taco meat made from soaked and dehydrated walnuts. You can use it in place of taco meat in a tortilla shell or a romaine lettuce leaf if you want to stick with raw. My favorite thing to do with it is simply to use it as a salad topper. I just sprinkle it over whatever salad I am having. It adds a lot of flavor plus protein. This is easy to make and will last a while.

Grilled Vegetable and Mozzarella Salad with a Spicy Chipotle Dressing

This was a lovely light summer meal. Even my teenage boys ate all the grilled squash which is a coup for me. You can adjust the spiciness of the dressing to your taste. I think the little roasted potatoes were the favorite. I used Peruvian purple potatoes but any baby potatoes will do.

Wonderful Waffles

My son named these waffles after our fantastic Sunday brunch of waffles topped with a fresh berry sauce and Maple butter. I hope you enjoy them as much as he did. The key is whisking the whites separately so they make the batter nice and light.
