I made this raw granola as a topping for a raw fruit bowl. Everyone loved it so much that I promised I would post it on my website. This is made entirely from nuts, no grains. It is easy because you do not need a few days to sprout anything. Simply soak the nuts and dates and raisins overnight and you are set to put it in the dehydrator. The whole process takes about a day and a half. Of course you can add any dried fruits to the granola after the dehydrating process if you want a more deluxe version.
Ingredients:
2 cups walnuts
4 cups almonds
1 1/2 cups sunflower seeds
2 1/2 cups dates, pitted
1 cup raisins
1 cup coconut
1 apple, peeled and cut into large pieces
cinnamon to taste
Sea salt to taste
1 tbsp vanilla
Soak the walnuts, almonds, and sunflower seeds overnight. In a separate bowl, soak the dates and raisins. Rinse the nuts and put them in a food processor. Add the peeled apple pieces. Chop to a fine consistency. Remove to a large bowl. Add coconut to the bowl.
Drain the dates and raisins and add them to the food processor. Add in vanilla, salt and cinnamon. Process to make a fine paste. Add the paste to the nut bowl and mix well. Adjust seasoning.
Spread onto dehydrator trays covered with a Teflex sheet. Dehydrate at 115 degrees until crunchy,, about 12 – 18 hours.
Enjoy over fresh fruit. Add fresh almond milk or homemade yogurt for a healthy breakfast or daytime snack.
