Cilantro Basil Mint Chimichurri Sauce

This herbaceous sauce is simple to make and fantastic drizzled on just about anything from seafood to chicken to grilled vegetables. I roasted some cauliflower and Brussels sprouts and drizzled this sauce over and topped it off with shredded Parmesan and toasted pine nuts. It was a delicious side dish. This sauce can also be used as a base for a salad dressing. Just add a little more oil and maybe water to thin it out before tossing with your favorite salad fixings.

Ingredients:

2 limes, juiced

1/3 cup olive oil

1/4 cup white wine vinegar or champagne vinegar

leaves from one bunch of Italian parsley

leaves from one bunch of cilantro

20 leaves mint

20 leaves basil

3 cloves garlic

1 tsp red pepper flakes

Mango Salsa

A friend of mine always makes this salsa when we come to visit her in Reno. It is so delicious that everyone puts it on everything and if all else fails, just eat it with a spoon. It is simple to make but requires delicious mangoes.

Tomato Vodka Sauce

My son is now a college boy and is about to move into his first apartment. He has asked me to teach him some good simple recipes for college life. HIs first request was a pasta sauce. He loves a good creamy Tomato Vodka Sauce, so we created the following recipe. It was delicious and very easy to make. They say the vodka helps bring out the flavors of the tomatoes. I think it was originally created in the ’70’s by the vodka industry for some self promotion. No matter what the reason, the end result is delicious.

Thai Red Curry Sauce

I was looking for a red curry sauce to serve with fish, rice, and stir fried bok Choy. This is what I came up with and it is delicious served with any seafood and chicken. It is a great sauce to have on hand to ladle over grilled fish for a Thai inspired barbecue.

Tomato, Marjoram, and Fennel Sauce

I made this sauce to go with a potato au gratin style dish, but my family forgot to use it. So the next day, I pureed it and used it on pasta and eggplant parmigiana. It was delicious. Everyone commented on the subtle licorice flavor and the nice pairing of the marjoram with the fennel. It is very simple to make and can be used on almost anything.

Perfect Pesto

I was able to coax this recipe out of an Italian friend of mine. It is a great pesto recipe. Use it on its own or dilute with warm cream to make a creamy pesto. This is perfect to make during the summer and then freeze to have all winter long.

Crazy Mixed Up Pesto Sauce

This recipe is a crazy twist to a classic sauce. Fabulous and versatile, you’ll find that you will want to slather this sauce on everything from fish to pizza to pasta. Keeps well in the freezer too. You can also try many variations of this recipe. Try using toasted pine nuts instead of cashews or varying the proportion of herbs. You can omit the shallots and use garlic instead or omit the cilantro, mint and chili peppers and use a cup of marinated sundried tomatoes instead.

Papaya or Mango Salsa with Honey Ginger Balsamic Vinegar

Here is a salsa I made to feature EVOO’s Honey Ginger Balsamic Vinegar. It was delicious. I served it on grilled black cod. It would also be good on grilled shrimp or scallops or try it with spring rolls or even dumplings. Today I had it for lunch on top of  smoked salmon and cream cheese on toast. The Honey Ginger Balsamic Vinegar added a nice sweetness to the salsa.

Enchilada Sauce

This recipe goes nicely with the Tofu, Broccoli and Spinach Enchiladas. It is quick and easy to make using a commercial salsa.

½ onion

1 (14 oz) can whole tomatoes in juice

3 cloves garlic

3 to 4 tablespoons commercial hot salsa

1 red bell pepper, charred, peeled, stemmed and seeded (optional)

1 tsp salt

Combine all ingredients in a food processor and buzz until smooth.
