Cinnamon Pecan Scones

Here are some more delicious scone recipes. I made two different kinds the other day just for the fun of it. I always like taste comparing. Both scones were a big hit.

1/2 – 3/4 cup heavy cream

2 egg yolks

1 tsp vanilla

1 cup white flour

1 cup whole wheat flour

5 tbsp date sugar

1/2 tsp salt

1 tbsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

6 tbsp cold unsalted butter, cut into pieces

2/3 cup pecans, chopped

1/2 cup dried currants

Zucchini Bran Muffins

My Mom presented me with a huge zucchini from her garden so I knew it was muffin making time. These muffins turned out great and they are healthy and kids will like them. You can substitute oil for the butter.
