Thai Tuna Burgers with Lemon Ginger Mayonnaise

This recipe has been a hit in my kitchen for at least 10 years. We always pull it out in the summer for a great barbecue. I have served it to people who swear they don’t like fish, and they have completely devoured one of these burgers. Any leftover mayonnaise is good for making Asian style tuna fish sandwiches the next day.

Indonesian Coleslaw

My mother sent me home with shredded cabbage from her garden and the ingredients to make this coleslaw. It turned out beautifully. I served it with Thai Tuna Burgers and the partnership was perfect. This coleslaw reminds me of the Indonesian salad called Gado Gado.

Summer Squash Orange Muffins

Guess what? More summer squash from my Mom’s garden.  Not only did she send me with the squash but also with this recipe to try. It was a big hit. Kids eating squash – can’t get any better than that. It makes about 16 muffins

Yellow Summer Squash and Corn Bisque

Oh, the fun of using up random summer vegetables from a garden. I found myself with the dilemma of lots of yellow summer squash which normally does not appeal to two teenage boys. I have found a trick though in disguising vegetables. If you puree them, nobody knows what they are. So my son who swears he hates zucchini and squash ate a big bowl of this soup before I announced the main ingredient was squash. This soup is tasty and easy to make.

Broccoli, Mushroom, Cheddar Quiche

I got some broccoli out of my Mom’s garden and was inspired to make a quiche for my family. I am going away for a few days and I knew this would be a great surprise to find in the refrigerator and would last them for dinner and probably a lunch. I must admit, this quiche looks extraordinary.
Please use your favorite savory pie crust. I have a great recipe from my time in Paris but it is hard to describe in a recipe. Good pie crust is all about the technique and lots of Beurre (butter) as the French say. I have made mine a little healthier by substituting some whole wheat pastry flour for the white flour. Come take a pie making class with me and I will teach you all the tricks.

Zucchini Bran Muffins

My Mom presented me with a huge zucchini from her garden so I knew it was muffin making time. These muffins turned out great and they are healthy and kids will like them. You can substitute oil for the butter.

Back from Dubai

I know I have not posted in a few weeks. We were away in Egypt and Dubai. A great trip but I have no new culinary discoveries to report. Well actually, I found some great deals on saffron, so you can look forward to an upcoming paella recipe.

Perfect Pesto

I was able to coax this recipe out of an Italian friend of mine. It is a great pesto recipe. Use it on its own or dilute with warm cream to make a creamy pesto. This is perfect to make during the summer and then freeze to have all winter long.
