Zucchini Bran Muffins

My Mom presented me with a huge zucchini from her garden so I knew it was muffin making time. These muffins turned out great and they are healthy and kids will like them. You can substitute oil for the butter.

1/2 cup flour

1 cup whole wheat flour

1/2 cup wheat bran

2 tsp baking powder

1/2 tsp salt

2 tsp cinnamon

1/4 tsp cloves

1/4 tsp nutmeg, freshly grated

1 stick unsalted butter, melted

1/3 cup date or coconut sugar

1/4 cup maple syrup

2 eggs

1 tsp vanilla

1/4 cup milk

1/2 cup currants

1/2 cup walnuts, chopped

2 cups grated zucchini, ( I grated them in a Cuisinart and then chopped them a little finer with the blade)

Preheat the oven to 400 degrees. Mix the dry ingredients together in a bowl. Add in the currants and chopped nuts.

Then blend the melted butter, sugar, syrup, eggs, vanilla,and milk together in a food processor or by hand. Add the wet ingredients to the dry ingredients. Stir to blend together then stir in the zucchini. Put the batter into muffin cups and bake for about 10 -12 minutes or until a toothpick inserted in the center comes out clean.
