Indonesian Coleslaw

My mother sent me home with shredded cabbage from her garden and the ingredients to make this coleslaw. It turned out beautifully. I served it with Thai Tuna Burgers and the partnership was perfect. This coleslaw reminds me of the Indonesian salad called Gado Gado.

1/3 cup smooth peanut butter

3 tbsp fresh lime juice

2  tbsp Asian fish sauce

3 tbsp water

2 tbsp agave

2 garlic cloves, minced

1 tsp Chinese chili sauce

6 cups thinly sliced napa cabbage

2 cups red cabbage, thinly sliced

2 carrots, julienned

1 red pepper, thinly sliced

2 tbsp chopped cilantro

10 mint leaves, minced

salt and pepper

In a medium bowl, whisk the peanut butter with the lime juice, fish sauce, water, agave, garlic and chili sauce.

In a large bowl, toss together the remaining ingredients. Toss the slaw with the dressing and season with salt and pepper. Serve right away.
