This raw food recipe came from a friend who attended the Hippocrates institute. As in many raw food recipes, it requires you to soak nuts which become the basis, or the meat, of the recipe. In this case, soak the walnuts overnight and then dehydrate to regain their crunch. You can serve this walnut taco meat either wrapped in lettuce or cabbage leaves, or if you are not ready to be completely raw, you can put it in traditional taco shells.
Taco meat:
3 cups walnuts, soaked and dehydrated
1 –2 cloves garlic
1 –2 tbsp chili powder
cayenne to taste
bragg liquid amino to taste
Hot sauce:
1 ½ cups red pepper, roughly chopped
1 fresh hot chili pepper, like habanero or cherry bomb, chopped (optional)
1 tbsp paprika
1 tbsp chili powder
¼ tsp cayenne
½ tsp garlic powder
½ tsp kelp powder
½ tbsp lemon juice
¼ tsp stevia
3 tbsp olive oil
Put all the ingredients for the taco meat in a food processor and pulse until desired texture is achieved. Season to taste.
Combine all the hot sauce ingredients in a blender and blend well.
Serve the taco meat in green lettuce leaves or cabbage with hot sauce and any other desired trimmings like chopped tomatoes and yogurt.
