Blueberry Cinnamon Oatmeal Pancakes

I purchased a new kitchen toy, and I am thrilled with it. It is a Cuisinart griddler. Basically it is an electric grill, griddle, panini press and waffle maker all in one. I love it. So, needless to say, I have been experimenting and putting it to the test. On the weekends, we try to make one special breakfast. This week, I cooked up these yummy pancakes. Plum Almond Buckle

I was at a back to school get together for my son’s class and one of the Mom’s made this really great Plum Almond Buckle. A buckle is simply a butter cake that bakes up around fresh fruit. It is very similar to a Betty. I think it comes out like a nice plum coffeecake. Anyway, I asked her to send me the recipe and she did. I thought it was delicious. The recipe calls for a lot of sugar. I have substituted a smaller amount of date or coconut sugar. She used plums off of her tree so I think any nice ripe plums would do. Summer Squash Orange Muffins

Guess what? More summer squash from my Mom’s garden.  Not only did she send me with the squash but also with this recipe to try. It was a big hit. Kids eating squash – can’t get any better than that. It makes about 16 muffins

Zucchini Bran Muffins

My Mom presented me with a huge zucchini from her garden so I knew it was muffin making time. These muffins turned out great and they are healthy and kids will like them. You can substitute oil for the butter.

Buttermilk Biscuits for Summer Berry Shortcake

This is the recipe I used for my summer berry shortcakes. I macerated the berries in the Blackberry and Blueberry Balsamic Spiced Syrup and put them atop these biscuits. Then I topped that with mascarpone mixed with EVOO Honey Ginger Balsamic Vinegar.

Wild Mushroom and Roasted Garlic Frittata

I made a huge batch of roasted garlic a while back and froze them. They are great to have on hand to add to all sorts of recipes. Roasting the garlic mellows the flavor and adds a subtle garlic taste to your dish rather than the pungency of raw garlic. Look to my next post on how to roast garlic. My family ate this for dinner last night and loved it. You can use any mixture of mushrooms like shiitake, portobello, oyster, or chanterelles. The jalapeno adds a little kick but it can be omitted if you prefer a milder dish.

Crunchy Nut Cereal

Sometimes, particularly as the weather begins to get warmer, I go on raw food kicks. This recipe is one of my favorite raw food cereals. This is a very interesting combination of raw nuts and seeds plus raw flakes that are made similar to flax crackers but slightly sweetened.  I love this cereal with almond milk and some berries. I doubled this recipe when I made it because it keeps well in an airtight container. Remember you do need some special equipment to make raw food (see my post on Raw Food Essential Equipment.) Harvest Applesauce Breakfast Bundt Cake

It is a cold, snowy morning here in Denver and I am looking for something special to make for breakfast. I remembered this recipe so I dug it out. It looks like the perfect comfort food for today. I love the smell of something baking on a snowy day. So, I am heading off to wake my kids to the smell of a fresh coffee cake in the oven and maybe some hot tea. Diggin’ Granola

A good friend of mine asked me specifically to put my granola recipe on the website. I have served this granola to a lot of people over the years and they just can’t seem to get enough of it. When my friends visit me from around the country, they insist on being fed Diggin’ Granola. This is the basic recipe, but of course, it comes out a little different every time because when I make it, I basically use whatever is in my pantry. I vary the dried fruits and the nuts. You really can’t go wrong no matter what you add to it. This is great served with fresh fruit and yogurt or homemade almond milk. Read the rest of this entry »
