Serves 2
3 packets of frozen acai (it comes unsweetened, with guarana, or acerola)
2 tsp agave (if using unsweeetened)
1/4 cup liquid such as coconut water, almond milk, soy milk, fruit juice
3 strawberries
1/2 banana
Fresh fruit, such as berries, sliced banana, mango, papaya, cherries, etc..
1/2 cup granola (I like to use raw granola)
sprinkling of shredded coconut, bee pollen, goji berries
Puree the acai, liquid, strawberries, banana, and optional sweetener in a blender. You want it to stay very thick. Just add enough of the liquid to allow it to puree in the blender.
Put the fruit and granola in two cereal bowls. Top with the puree. Sprinkle bee pollen, coconut, and goji berries on top and serve. (Of course you can add any other super food ingredients you can think of. Get creative)
For a family always wanting dessert after dinner, this is such a healthy alternative. My husband and children loved it. Thank you for sharing this recipe.
