Whole Wheat Peanut Butter Chocolate Chip Cookies

Okay, even us health food nuts deserve a little treat now and then.  I used the dry bowl in the Vitamix to grind my own whole wheat flour and that made the cookies come out very light. We used no processed white or brown sugar but we did sweeten with a little maple syrup and the grain sweetener in the chocolate chips.

¼ cup butter (softened)

2/3 cup organic peanut butter

¼ tsp. Powdered stevia

1 date roll (rolled in coconut)

1 tsp. Grade B maple syrup

¼ cup apple butter (or apple sauce)

1 large egg

¾ cup whole wheat pastry flour

1/8 tsp salt

½ tsp baking soda

¾ cup organic grain sweetened chocolate chips

Preheat oven to 350F. Soften and cream butter and peanut butter in mixing bowl. Mix in the maple syrup and apple butter. Beat in egg until thick and smooth. Stir the flour, stevia, baking soda, and salt together. Add flour mixture to the peanut butter mixture. Place 1” balls of cookie batter on cookie sheet. You can choose to flatten them with a fork like a traditional peanut butter cookie or leave in ball shape to make a fatter cookie. Bake for 10 minutes. Remove from baking sheet and cool.
