Roasted Beets and Sweet Potatoes

I love all root vegetables roasted. I think it brings out their earthy flavors and caramelizes them to a perfect sweetness. This was a beautiful autumn side dish. This is very simple to make and you can keep the leftovers for up to a week.

Broccoli and Parmesan Gratin

This was an easy way to use up broccoli. Even my teenager, who claims to hate broccoli, ate it. It makes a nice side dish or pair it with some roasted potatoes or a nice grain for a full meal. Of course, I also served it with a crisp green salad.

Kale and Butternut Squash Strata

A strata is a type of bread pudding like casserole. It is a one dish meal made with bread cubes soaked in eggs and milk (like french toast) and then baked with assorted vegetables. In this case, I used fall flavors of kale, chard and butternut squash. It almost was like a stuffing casserole. I served it to guests who found it delicious. My complete menu was Tarragon Zucchini soup followed by the Strata and a nice green salad with a Sherry shallot vinaigrette. I finished the meal with a peach and blueberry crisp. Zucchini Feta Bulgur Casserole

This is a great casserole to use up lots of zucchini from your garden. Also, if you are like me, I am trying to use up as many of my fresh herbs before we get a cold snap. This is easy to put together and is nice and hearty for the fall weather.

Plum Almond Buckle

I was at a back to school get together for my son’s class and one of the Mom’s made this really great Plum Almond Buckle. A buckle is simply a butter cake that bakes up around fresh fruit. It is very similar to a Betty. I think it comes out like a nice plum coffeecake. Anyway, I asked her to send me the recipe and she did. I thought it was delicious. The recipe calls for a lot of sugar. I have substituted a smaller amount of date or coconut sugar. She used plums off of her tree so I think any nice ripe plums would do. Swiss Chard Kugel Torte

I made this dish last night for two teenage boys and all they could say was “How come you never made this before? It is amazing?” This is a nice casserole type dish with noodles, chard, eggs and milk. My son described it as a noodle quiche. You can use any braising greens like beet greens, kale, or spinach. You can also use Italian Fontina cheese.You can bake this in a 9″ springform pan or a 9″ inch cake pan. You do need some depth to the pan. I suppose a deep quiche pan would work as well.

Bangkok Shrimp with Button Mushrooms

Fruit Strips
14 09 2010If you have a dehydrator, this is a great way to use up overripe fruit and make a really healthy snack for your kids. I especially love this during peach season. The banana is for the consistency not the flavor. Once again, these proportions are estimates. Just experiment for the best flavor and consistency.

Indian Style Roasted Cauliflower

I made this simple curried roasted cauliflower dish for a potluck back-to-school barbecue and it was a huge hit. It is quite easy to make and super yummy as a side dish to grilled fish or maybe an Indian curry.

Summer Vegetable Stew on Corn Potato Cakes

Summer is the best time to get experimental with all the vegetables found in the stores or in your garden. I looked in my refrigerator and found zucchini from my Mom’s garden and some corn on the cob and Russet potatoes. This is what I came up with to use them for an easy summer dinner. I served this with a crispy Caesar Salad.
