Harvest Applesauce Breakfast Bundt Cake

It is a cold, snowy morning here in Denver and I am looking for something special to make for breakfast. I remembered this recipe so I dug it out. It looks like the perfect comfort food for today. I love the smell of something baking on a snowy day. So, I am heading off to wake my kids to the smell of a fresh coffee cake in the oven and maybe some hot tea. Pear Cobbler with Dried Blueberries and Cornmeal Biscuits

This was the dessert we made at the cooking class. I chose it because it is a good example of a cobbler, which is just a baked fruit dessert with a batter or bisuit topping. Also, the great thing about cobbler is you can substitute almost any fruit depending on the season. Try peaches and berries in the summer, or maybe even a tropical cobbler with mango and papaya. This cobbler uses apple juice instead of sugar so it is really just sweet from the pears and blueberries. There is a little sugar added to the biscuits. The technique for making these biscuits is the same for making scones.

Whole Wheat Peanut Butter Chocolate Chip Cookies

Okay, even us health food nuts deserve a little treat now and then.  I used the dry bowl in the Vitamix to grind my own whole wheat flour and that made the cookies come out very light. We used no processed white or brown sugar but we did sweeten with a little maple syrup and the grain sweetener in the chocolate chips.

¼ cup butter (softened)

2/3 cup organic peanut butter

¼ tsp. Powdered stevia

1 date roll (rolled in coconut)

1 tsp. Grade B maple syrup

¼ cup apple butter (or apple sauce)

1 large egg

¾ cup whole wheat pastry flour

1/8 tsp salt

½ tsp baking soda
