2 cups drained cooked chickpeas or canned chickpeas
1/2 cup tahini
1/4 cup EVOO Meyer Lemon Oil
2 garlic cloves, peeled and chopped
sea salt and black pepper to taste
1 tbsp ground cumin
1 tsp paprika
juice of one lemon
chopped parsley for garnish
Put everything except the parsley in a food processor. Process until pureed completely adding water if necessary to get the right consistency. Taste and adjust the seasoning adding more lemon oil or lemon juice if necessary. Serve drizzled with more Lemon oil and sprinkled with a little paprika and garnished with parsley.
