Breakfast Oats

These oats are simple but require a little thinking ahead. If you have never had steel cut oats, you are in for a treat. They are much heartier than oatmeal. Soak the oats overnight and then bring them to a boil right after you wake up in the morning. Turn them down to simmer and then do your morning shower, meditation, exercises or whatever your daily routine is. When you are done, you will have hot oats ready and waiting. You can use any dried fruit besides raisins. It is delicious topped with a little almond milk and some granola or toasted nuts.

1 cup steel cut oats, rinsed

1 ½ cups apple juice

1 ½ cups water

¼ tsp. Sea salt

¼ cup raisins

½ tsp ground cinnamon.

Soak oats in apple juice and water overnight in a heavy pot. Add raisins, cinnamon, and salt to oats. Cover and bring to a gentle boil. Reduce heat to low, cover, and simmer until all the liquid is absorbed about 45 minutes. Use a flame tamer* to moderate heat.

*A flame tamer is a metal disc that sits on top of your burner and keeps the heat low and even under the pot so that your oats won’t burn.
