Back from Egypt

Hello readers,

I am back from Egypt and ready to officially launch this blogsite. Some exciting things to look forward to are daily recipes; a calendar of upcoming cooking classes; tips on where to buy healthy ingredients and cooking equipment; great cookbook recommendations; and so much more. I have already received questions from readers in regards to where to buy spices; what is good for my child in terms of healthy fiber; and what is the best vanilla to buy. I am happy to consult with you on any cooking related topic. Please see my consult page. It is a little expensive but a whole community can share in the cost and then once grown, you can share the culture with each other.





Raw Food Essential Equipment

I like experimenting with raw food recipes. I am not a raw foodist yet, and I am not sure I will ever be one. I like cooking too much, and I find it difficult to truly blend flavors unless heat is applied. With that being said, there are a number of raw food recipes I add to our regular diet. In fact, Phillip and I did do a cleanse that involved eating raw for about 40 days so I got a lot of practice. Power Green Drink

I heard that organic fresh  cucumber juice is extremely good for you. So, I tried straight cucumber juice and found it unpalatable. I came up with the following concoction nstead which is still very green, but tasty nonetheless. Drink this first thing in the morning and you will not be hungry for hours.

1 cucumber

2 big fistfuls of wheat grass

1 stick celery

4 sprigs parsley

Juice these all together for a powerhouse green drink to start the day.





Whole Wheat Waffles with Berry Sauce

This recipe is frequently requested in my house on a Sunday morning. It does require a waffle iron. If you don’t have one, try making whole wheat pancakes and serving them with this sauce. It is so much better than syrup. I don’t use exact measurement for the sauce but I will give you the idea and you can make any necessary adjustments. Read the rest of this entry »





Fennel and Arugula Salad with Grapefruit

I served this salad with the Quinoa Soup. It is a sweet salad with the grapefruit and fennel. It makes a nice accompaniment to spicy dishes and refreshing in the winter when citrus fruits are a good option. Read the rest of this entry »





Quinoa and Vegetable Soup

I love quinoa. It is a delicious grain, not too starchy, and really nutritious. This is a simple soup made with ingredients indigenous to the Americas. The quinoa thickens the soup slightly and adds a nice nutty taste. Read the rest of this entry »





Thai Green Curry with Tofu and Mixed Vegetables

Serves 4

I enjoyed this simple curry after a day of skiing with my family. It is quick and easy. You can add any vegetables you have in the refrigerator. If you prefer, you could add shrimp instead of tofu. Serve it over brown Jasmine rice or any other wholesome grain. You can buy Thai green curry paste in a bottle in the Asian section of the supermarket. Read the rest of this entry »





Greek Style Green Beans

Incan Corn, Potato, Quinoa Risotto (sort of)
