Potato, Artichoke, Mushroom and Goat Cheese Gratin

I was looking to make a hearty dish that I could make ahead of time and my family could reheat easily. I came up with this gratin filled with yummy portobellos, marinated artichoke hearts and lots of cheese. I was not around to eat it with them, but when I returned home, they had only left me a small amount because it was too good to pass up. I guess that is a positive sign. This is quite easy to put together and is delicious served with a green salad.

Asian Shrimp Risotto

This risotto is made with arborio rice using the same techniques as traditional Italian risotto. However, I used a lot of Asian ingredients to give it a nice flavor twist. You can add other seafood. I was hoping to add some smoked scallops which I think would add a fabulous dimension to this dish.

Winter Squash Polenta with a Wild Mushroom Ragout

My husband kept asking me to come up with some good polenta recipes. So I finally completed his request. This dish used up two winter squashes I had from my Mom’s garden. You can use Butternut, Acorn, Delicata or any other winter squash. Also, you can use any selection of wild mushrooms you like. This can be prepared ahead. Make the polenta and put in the baking dish and then refrigerate. Bake before serving. Saute the mushrooms ahead. Then add in the stock and cream before serving.

Asian Style Tuna and Avocado Wraps with Fusion Salsa

We made these for dinner tonight and they were super yummy. It is a complete meal with protein, vegetables and carbohydrate. They can be a little drippy so eat them carefully over your plate.

Kale and Butternut Squash Strata

A strata is a type of bread pudding like casserole. It is a one dish meal made with bread cubes soaked in eggs and milk (like french toast) and then baked with assorted vegetables. In this case, I used fall flavors of kale, chard and butternut squash. It almost was like a stuffing casserole. I served it to guests who found it delicious. My complete menu was Tarragon Zucchini soup followed by the Strata and a nice green salad with a Sherry shallot vinaigrette. I finished the meal with a peach and blueberry crisp. Zucchini Feta Bulgur Casserole

This is a great casserole to use up lots of zucchini from your garden. Also, if you are like me, I am trying to use up as many of my fresh herbs before we get a cold snap. This is easy to put together and is nice and hearty for the fall weather.

Swiss Chard Kugel Torte

I made this dish last night for two teenage boys and all they could say was “How come you never made this before? It is amazing?” This is  a nice casserole type dish with noodles, chard, eggs and milk. My son described it as a noodle quiche. You can use any braising greens like beet greens, kale, or spinach. You can also use Italian Fontina cheese.You can bake this in a 9″ springform pan or a 9″ inch cake pan. You do need some depth to the pan. I suppose a deep quiche pan would work as well.

Bangkok Shrimp with Button Mushrooms

Summer Vegetable Stew on Corn Potato Cakes

Summer is the best time to get experimental with all the vegetables found in the stores or in your garden. I looked in my refrigerator and found zucchini from my Mom’s garden and some corn on the cob and Russet potatoes. This is what I came up with to use them for an easy summer dinner. I served this with a crispy Caesar Salad.

Thai Tuna Burgers with Lemon Ginger Mayonnaise

This recipe has been a hit in my kitchen for at least 10 years. We always pull it out in the summer for a great barbecue. I have served it to people who swear they don’t like fish, and they have completely devoured one of these burgers. Any leftover mayonnaise is good for making Asian style tuna fish sandwiches the next day.
